The grapes are not only screened continuously, but also carefully selected one by one to ensure that each one is completely ripe. Dijin Manor’s grape selection process is notoriously rigorous. Only one glass of wine can be produced from a single vine. Sometimes, if Dijin Manor believes that the quality of the wine is not high enough, it may not be produced for the whole year. With any bottle of wine, this happened in 1972, 1974 and 1992.
